Mom's Pumpkin/Banana Bread

Light-spiced cake consistency made with either pumpkin or banana

Ingredients

  • 1 1/2 cups sugar and 1 2/3 cups flour
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon clove
  • 1/2 teaspoon cinnamon
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 2 eggs and 1 cup pumpkin or mashed bananas

  • Combine all the ingredients and thoroughly mix with a hand or stand mixer on medium speed


    Bake in greased loaf pan at 350 degrees for 1 hour or until toothpick comes out clean.


    Loosen bread from pan by running a knife around edge and turn bread out on wire rack to cool. Let cool for 15-20 minutes.


    Note: original recipe stated you can use brown sugar. Also mentions two optional ingredients you may add, 1/2 cup soaked raisins that have been drained, 1/2 cup chopped pecans.
