Mexican Rice

Like a Homemade Version of Hamburger Helper

Ingredients

  • 1 lb hamburger browned
  • 1 onion chopped
  • 1 bell pepper chopped
  • 1 cup white corn
  • 1 cup black beans
  • 1 cup diced tomatoes
  • 1 cup enchilada sauce (check out our recipe)
  • 4 cups cooked rice
  • 1 lime wedged & some fresh cilantro


  • Brown the hamburger with the chopped bell pepper and chopped onion.


    Add the black beans and corn and cook for a couple minutes. Then add the rice and sauce and coat quickly and evenly. Top with approx 1 lb of cheese and broil on Hi to melt.


    Top with diced tomatoes, cilantro and lime wedges. Serve with sour cream if you'd like and enjoy!
