Green Beans & Potatoes

Best Green Beans Ever!

Ingredients


Using a large well seasoned cast iron skillet or a large non-stick pan cook chopped bacon until it starts to get crispy. Remove the bacon and brown the cubed potatoes on medium high heat. Make sure potatoes are done and browned well. Remove potatoes and set aside.


If the bacon grease is low add half and half 2 Tablespoons butter and 2 Tablespoons olive oil. Then cook fresh green beans, garlic, bell pepper and onion for about 8 minutes on medium heat stirring constantly. Add the potatoes and bacon back into the pan and add chicken broth. Turn heat down to low, cover leaving a gap for steam to escape. Simmer for 30 minutes adding chicken broth if needed.


Note: It is alright to let the broth evaporate completely at the end but make sure everything is cooked to your liking. I prefer green beans to be slightly crisp still.
