Red Enchilada Sauce

Good on all kinds of Mexican Dishes

Ingredients





In a small saucepan combine oil and flour and stir on medium-high heat consistently to make roux. Only need to cook for 1-2 minutes.


Add the chili powder, garlic powder, cumin and oregano and cook for 1 more minute.


Gradually pour the stock while whisking constantly and stir until no more lumps remain. Continue cooking until the sauce reaches a simmer. Then reduce heat to medium-low to maintain simmer for about 10-15 minutes, uncovered, until the sauce has slightly thickened.
