Autumn Apple Maple Vinaigrette with Pecans
Sweet, Zesty, an Earthy crunch, what's not to love?
Ingredients for salad
- 6 cups spring mix salad
- 1/2 cup dried cranberries
- 1/2 cup pecan halves
- 1/2 cup feta cheese
- 2 cups semi-tart apples
- 4 slices cooked bacon chopped
Ingredients for Maple Dijon Vinaigrette
- 1/4 cup extra virgin olive oil
- 2 Tablespoons apple cider vinegar
- 2 Tablespoons maple syrup
- 1 Tablespoon dijon mustard
- salt & pepper to taste
Start cooking the bacon until crispy. While bacon is cooking, core the apple cut into small cubes.
You can also make the dressing while the bacon is cooking. Add all the ingredients for the maple
dijon vinaigrette to a small mason jar. Shake to mix.
In a very large bowl, layer salad ingredients evenly to help have a balanced mix.
Dress the salad and toss.
